You could argue that flipping the pancake is the most important part of the whole process. Having a pan that’s good for flipping is key. We already talked about the importance of a non-stick surface. It depends on the pan. Some of these pans have non-stick surfaces that are so effective, they don’t need any butter. If you’re using a cast-iron pan, you may need to add some butter or oil until the pan is properly seasoned. If you want to add butter because you just prefer your pancakes that way, by all mean, go for it!

You can but we wouldn’t recommend it. Crepe pans are a little different than pancake pans just as crepes are different than pancakes. You might find that it’s a little difficult to flip a pancake on a crepe pan or that it doesn’t cook the pancakes in the same way as a thicker pancake pan.

If you need to use grease or if you just prefer it, add non-stick spray or a small amount of oil to the pan before you make the first pancake. You don’t need to add more grease after every pancake, it’s usually possible to make two or three before needing to add more.

Again, it depends on the pan. You can generally use steel or cast iron on induction cooktops but most aluminum pans will not work. Induction cooking heats the pan through a magnet, not direct exposure to a heat source, so if the pan isn’t made of magnetic material, it probably won’t work on an induction stove.
